Spinach and Artichoke Dip



Hi everyone, hope your final days of summer are going well.  We are officially on our last week of summer break, and have been busy getting ready for the school year.  It seems like everyone in my house is ready for school but me, I am having a hard time letting go.  

I wanted to share with all of you a recipe that I got off a magazine a few years ago, and have made ever since.    This is my go to appetizer dish that I always have when we have friends or family over, and it's always a big hit.
 Even my 8 year old loves it, that's saying a lot considering it has a ton of spinach, and you know how kids are with their leafy green veggies.

Here is what you need:  




Here is what it looks like after you have mixed all of the ingredients:  




After you sprinkle the mozzarella:




Right after it comes out of the oven:




And of course, right before digging in:




Ingredients:

1 cream cheese (plain, 8oz)
1 can artichoke hearts, chopped
1 frozen spinach leaves (10oz)
1/2 cup mayonnaise
1/2 cup grated parmesan cheese
2 garlic cloves, chopped
1/2 tsp salt
1/4 tsp pepper
1/4 cup shredded mozzarella cheese

Cook spinach in water for about 10 minutes, drain.  Mix all ingredients in mixer except for mozzarella.  Spoon mixture into a greased baking dish.  Sprinkle mozzarella over mixture.  Cook for 30 minutes at 350 degrees. Enjoy with your favorite tortilla chip or cracker.

  1. Yummm! This is the same way I make my dip, and come to think about itI think I found it in a magazine too! Love spinach and artichoke. Best creation ever! School started yesterday for us...bring on the cooler temps! :-)

  5. Do you guys have Cheddar's Restaurants? I'm NOT a cooked spinach eater but their dip is one of my favorite things there! I've wanted to find a recipe similar to theirs and yours looks like a winner! Pinning so I can try it out soon, thanks so much for sharing this Kristel!

    1. HI Tina, I do leave the leftovers in the fridge for about 3 to 4 days, and it's still pretty good. I always reheat it in the microwave for about 40 seconds only, and stir it right after.
